It’s warming up and the BBQs are out, time for one of my favorite salads – a Slaw! Slaw is a great recipe for introducing some raw veg into your meal. This isn’t included in the recipe below, but I also occasionally add some grated apple or some raisins into the recipe to entice my son to have some so do try it with that too if you fancy it. It will also keep in your fridge for a few days so great for batch cooking.
My favourite one is as follows:
150g Sliced Red Cabbage
1 Carrot grated
1 Red onion finely sliced
Some chopped chives
80g Greek Yoghurt
2 teaspoons of Apple Cider Vinegar
½ teaspoon of medium Curry powder
Some salt and pepper
Add the vegetables to a large bowl. Mix the dressing in a jug. If it comes out a bit thick, then add a little milk to thin it out. Add the dressing to the bowl and mix well to ensure all of the vegetables are covered.
