This is one of those super quick traybake recipes when you only have a few minutes of prep time available, but it is packed full of flavour.
1 Red Onion, chopped
2 Red Peppers, chopped
1 Courgette, chopped
250g Halloumi cut into slices
2 Cloves Garlic, peel on
2 Sweet Potato’s, chopped into smallish pieces
1 teaspoon Cumin
2 teaspoons Paprika
Some Olive Oil and Balsamic Vinegar
This recipe will serve 2 people. Preheat the oven to 180°c. Add the onions , peppers, courgette and sweet potato to a medium sized roasting pan with garlic cloves, paprika and cumin, drizzle over some olive oil and balsamic vinegar and add a little salt and pepper. Mix well and cook for 30 minutes. After 30 minutes, open and squeeze the garlic out and mix well together again. Layer the halloumi on top and place back in the oven for another 10 minutes until the Halloumi is golden. Serve with some Greek yoghurt on the side and some greens.
