Here is my Peach salad. It’s packed full of healthy greens and fat’s and is high in protein. It is a game changer to BBQ’s!
2 handfuls of Spinach
1 handful of Rocket
2 chopped Spring Onions
½ cup of cooked Peas
½ Avocado, sliced
1 Handful of Tenderstem Broccoli, cooked (I like mine charred in a pan)
1 Peach, thinly sliced (I charred mine with the Broccoli)
1 tablespoon Sunflower Seeds
Add all the ingredients onto your serving plate. I like mine with a dressing and my favourite is equal parts Olive Oil and Balsamic Vinegar and a small drizzle of Honey which I shake together in a glass jar and serve alongside the salad.
I love adding quick and easy recipes like this to my client’s meal plans – it makes it so practical and easy for them to up the plant intake and yes there is a 8 different kinds of plant foods in this recipe! (If looking at the quantity it would only equate to around 4-5 portions of vegetables and fruit)
