Raspberry Date Bark

This is one of the best recipes with dates that I have tried. In my version below I include dark chocolate and raspberries as this is one of my favourite sweet food flavour combinations!

  • 200g Dates

  • 2 Tbsp Almond Butter

  • ¼ cup of Frozen Raspberries, finely chopped

  • 100g Dark Chocolate

  • ½ tsp Himalayan Sea salt

  • 4 tsp’s Coconut Cream (I use the hard bit on top of a can of coconut milk)

Press the dates onto a lined tray with baking paper. Make sure they are close together and overlapping slightly. Drizzle over the Almond Butter and smooth across the top of the dates with your spoon to make sure it is fairly equally distributed. Sprinkle over the Raspberries. In a pan over low heat melt the chocolate and stir in the coconut cream and salt. Pour the chocolate mixture over the top and place in the freezer for 2 hours. Remove 5minutes before eating and enjoy!
